apple salsa salmon...

super easy, perfect summer fish meal. i served mine with a side of steamed broccoli and it was delicious.

INGREDIENTS
olive oil
two 8-ounce salmon fillets
1 teaspoon sesame seeds
1/2 teaspoon garlic powder
1/2 teaspoon dried onion
freshly ground black pepper
2 tablespoons soy sauce

2 tomatoes, chopped
1 apple, cored and diced
2 stalks scallions, finely chopped
juice of 1 lemon
1 tablespoon peeled, minced fresh ginger



DIRECTIONS
Preheat the oven to 400 degrees. Coat a pan with olive oil. Rinse the salmon with cold water and pat dry with a paper towel. In a shallow bowl, mix the sesame seeds, garlic powder, onion, and pepper. Pour the soy sauce into another shallow bowl, then dip the salmon in the soy sauce and coat well. Take the salmon our of the soy sauce and press it into the spice rub, allowing the spices to stick to the top and sides of the salmon. Place the salmon in the pan and cook for 12 minutes, or until the center of the salmon turns from red to pink.

For the salsa, toss the tomatoes, apple, and scallions in a bowl, and sprinkle the lemon juice on top. Add the ginger and mix well. Place half the salsa next to each salmon portion. Serves 2.
